Most of the opportunities will be in non-profit and I know many alumni actually got hired by their site. I have a really good relationship with the program and site. A degree isn't a hard requirement for most programs, just a preference, and I definitely had VISTA members who didn't have degrees, but their work/life/etc experience more than made up for a 4-year degree.
One major myth about AmeriCorps is that its members are not paid and that it is not a practical choice for most people. While it's true that AmeriCorps members are considered volunteers and do not receive a salary, they do receive a monthly living stipend to help cover rent, groceries, gas, and other expenses.
It really varies. The AmeriCorps program that I did matched ~25% of applicants -- but it was in a large city and provided housing, which made it more desirable. On the other hand, a placement in the rural midwest or south, e.g., would be less competitive.
If you want to do AmeriCorps together you should apply to S/N or VISTA programs and just make sure your sites are close enough that you can live together.
